Ingredients

Tofu (1/4 tofu)
Ground pork (100g)
Spring onion, finely chopped (1/4 leek)
Bamboo shoots (boiled in water) (1)
 
<Seasonings>
Sesame oil (1 Tbsp)
Cooking sake (1 Tbsp)
Potato starch (1/2 Tbsp)
Salt (a pinch)
 
<Seasoning for sauce>
Mitsukan pure brown rice black vinegar (1 Tbsp)
Soy sauce (1/2 Tbsp)
Ginger (1/2 pc.)
Coriander or Chinese cabbage or pak choi (As needed)

Instructions

  1. Wrap the tofu in paper towels and microwave (600W) for 1 minute to drain lightly. After that, mash the tofu and put it in a bowl.
  2. Coarsely chop bamboo shoots. Cut ginger into thin strips and soak in water.
  3. Add the ground pork, chopped leeks, bamboo shoots, and [seasonings] to ①, mix well, and spread flat on a baking dish. Cover with plastic wrap and microwave (600W) for 4 to 5 minutes.
  4. Divide into small plates and garnish with [seasonings] and ginger.
