  • With the original use of AJIPON in hot pots, Mizkan was focused on quality and taste, evaluating this meticulously to see if the flavor would stand up even when diluted.
  • In addition to AJIPON’s use as a seasoning for hot pots, we designed quality by conducting taste tests on a number of Japanese dishes, including chilled tofu, gyoza and ohitashi (boiled greens in bonito-flavored soy sauce).
  • Only a select group of evaluators that specialize in the ponzu vinegar category at Mizkan take part in evaluating taste, appearance and aroma.

  • Citrus juice: Mizkan’s original blend of several types of citrus juice was used to create a refreshing feeling yet with a sense of richness.
  • Soy sauce: We selected a soy sauce that would produce a refreshing taste, carefully focusing an aroma that was not too strong and a quality that would allow it not to settle too easily when used in ponzu vinegar.
  • Vinegar: We hand-picked the suitable vinegar for a refreshing, clean taste from those brewed by Mizkan for more than 200 years.
