Directions
- 1.Cut the chicken thigh into bite-sized pieces and coat with potato starch. Thinly slice the ginger and lightly crush the garlic.
- 2. In a stainless steel or non-stick pot, heat the vegetable oil and sear the chicken. Add the sauce ingredients, ginger, garlic, and boiled eggs, and simmer for 10 minutes. Turn off the heat, cover, and let the flavours infuse for about 10 minutes.
- 3.Serve on a plate and garnish with mizuna greens cut into 4cm lengths.
