Ingredients

Pork (for shabu-shabu) (400g)
Chinese cabbage (hakusai) (1/8 of a stalk)
Bok choy (2 stalks)
Japanese mustard green (mizuna) (1 bag)
Enoki mushrooms (1 small package)
Carrots (1/2 of a carrot)
 
<Soup stock>
Mizkan Shiro Dashi Professional Taste® (1/4 cup)
Water (3 cups)
 
<Dipping sauce>
Mizkan AJIPON® (To taste)
 
Mizkan Gold Sesame Dry Roasted Sauce® (To taste)
Egg yolks (To taste)
Grated yam (frozen grated Chinese yam) (To taste)
Shredded cheese (To taste)
Spring onions (cut into small pieces) (To taste)
Plum paste (To taste)
Dried bonito flakes (To taste)
Chinese red chili oil (rayu) (To taste)
Green perilla (aojiso) (To taste)
Milk (To taste) (for cheese)
Potato starch (To taste) (for cheese)

Instructions

  1. Cut Chinese cabbage (hakusai) stalks into thin strips and leaves into 5-cm cubes. Separate the bok choy into stalks and leaves. Cut the stalks lengthwise into eights and the leaves into large pieces. Cut the mustard green (mizuna) into 10-cm long pieces. Use a peeler to cut the carrot into thin slices. Remove the woody stems from the enoki mushrooms and gently loosen them.
  2. Add the <soup stock> to the pot and bring to a boil.
  3. Make the <dipping sauce> in a bowl.
  4. 1. AJIPON + egg yolks + spring onions
      2. AJIPON + plum paste + Green perilla (aojiso)
        3. AJIPON + Mizkan Gold Sesame Dry Roasted Sauce® + Chinese red chili oil (rayu)
          4. AJIPON + egg yolks + grated yam
            5. AJIPON + plum paste + dried bonito flakes
              6. AJIPON + shredded cheese (Mix milk and potato starch together and dissolve in microwave oven)
                Add [1] and pork to the <soup stock> and dip the meat until it is cooked through. Mix it with your favorite <dipping sauce>.
